Ceviche is a South American dish made of raw seafood cured in citrus juices. The fish ‘cooks’ in the acidic juices and turns slightly white and firm. Ceviche is healthy, delicious and very quick to make.
We replace the citrus juices with crab apple juice in order to adhere to our Produce Promise. It also gives it quite a different flavour which we like to think of as a taste of Pickle Shack!
